Our Ethos

At the heart of de’sendent is a commitment to provenance.

Born from our previous chapter at Arimia Estate, we carry forward a philosophy rooted in growing, sourcing, and respecting exceptional produce. While we no longer grow everything ourselves, that same care now extends into the relationships we’ve built with local farmers, fishermen, and artisans—people who share our belief that great food begins long before it reaches the kitchen.

Our menus are guided entirely by the region. The seasons dictate what we do, and we follow without compromise. There are moments of abundance and moments of restraint; both are equally important. When certain ingredients are unavailable, we adapt. When something exceptional appears, we lean in.

Technique is global, but the focus is always local. There is a quiet influence of Japanese philosophy in our approach—precision, balance, and a respect for the integrity of each ingredient—layered with the experiences we’ve gathered along the way.

We are not here to overcomplicate. We are here to listen—to the land, to our producers, and to the ingredients themselves.

de’sendent is an intimate restaurant shaped by people, place, and a deep respect for produce. We are a small team, driven by curiosity and care, working closely with the land and those who cultivate it to create a dining experience that reflects the South-West in its truest form. Led by Chef and Owner Evan Hayter, Owner Ann Spencer and Restaurant Manager Joshua Down, our team is united by a shared commitment to thoughtful food, genuine hospitality and meaningful connection. Understated in presence, deliberate in execution, and grounded in connection, de’sendent is less about spectacle and more about intention.

Our Story

de’sendent is, in many ways, exactly what the name suggests—a continuation, and an evolution.

It follows the closing of Arimia, a place that shaped our identity and laid the foundation for everything we do today. With the same chef, the same owners, and the same core philosophy, de’sendent emerged as a more refined, more focused expression of that journey.

The name also carries a personal note—drawn from the punk band Descendents, a long-time influence of chef and co-owner Evan Hayter. It reflects something of our nature: independent, a little unconventional, but always grounded in substance rather than noise.

Our team brings together a breadth of experience from across the world, but what unites us is a shared intent—to create something honest. You’ll feel that in the space, in the way we work, and in the way we welcome you.

This is not just a restaurant. It’s a place built by people who genuinely want to be here.

When You Dine With Us

Dining at de’sendent is designed to feel personal, relaxed, and quietly memorable.

Our space is intentionally understated, allowing the focus to remain on what matters—food, company, and atmosphere. The kitchen is open, and whenever possible, the chefs themselves will bring dishes to your table. There is no barrier, no performance—just a shared experience.

We offer a single degustation menu, shaped by the season and evolving constantly. This allows us to focus our energy on one thoughtful expression at a time, guided by what is at its peak.

Our drinks program follows the same philosophy. Designed by Joshua Down, wines are selected for their sense of place and the people behind them, with a strong emphasis on local producers alongside bottles that reflect our broader journey. Cocktails are ingredient-driven, often drawing on native botanicals, fermentation, and techniques borrowed from the world of wine.

The rhythm of your experience will shift with the seasons. Long, sunlit evenings in summer may begin outdoors with a drink in hand; winter invites something slower, warmer, and more intimate.

Above all, what we offer is a sense of welcome.
